The booking categories are edited by locating the booking section in the client profile or application, NOT in the booking section itself!
Step 1: Go to More -> Application & Profile Builder
Step 2: Look for client profile or client application form where you want to add the booking categories. Click on pencil / edit icon.
Step 3: Look for the booking section with field type "Booking Section" and add the categories one per line inside "List Categories" and Save the builder.
Result: In the client profile, added categories will appear in the booking form when creating a shift job.
